These cookies are seriously amazing. I made them for my family for Thanksgiving yesterday and they went crazy for them! They're the perfect cakey texture and the cream cheese frosting tops it off perfectly. I hope you can make them and enjoy them as much as I did.
Ingredients for the cookies: Ingredients for the frosting:
- 1/2 cup butter *1/2 cup butter
- 1 cup sugar *8 oz. block of cream cheese
- 2 eggs *3 tsp. vanilla
- 1 cup canned pumpkin *3 1/2 cups powdered sugar
- 2 cups flower *1 1/2 tsp. cinnamon
- 4 tsp. baking powder
- 1 tsp. salt
- 3 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ginger
Directions: In a bowl, mix the butter and sugar thoroughly. Add eggs and pumpkin. Next, sift flour, baking powder, salt, cinnamon, nutmeg, and ginger and fold into cookie batter. Drop a spoonful of cookie batter onto a cookie sheet and bake at 325 degrees for 14 minutes. Allow to cool and apply frosting with a knife.
They are super easy and fast. Next all you need to do is enjoy!
